J L Hudson Cheese Bread
This old Hudson's favorite is also adapted from a Gloria Pitzer
Newsletter.
1 cup warm water
1 envelope quick rise dry yeast
1 teaspoon sugar
31/2 cups flour
2 teaspoons salt
51/2 cups sharp cheddar cheese, grated
2 large eggs, beaten
1 large egg, beaten
2 tablespoons milk
1. In a 16-ounce measuring cup, combine warm water, yeast and sugar.
Stir and let it stand until it bubbles to the rim of the pitcher (5 to 6
minutes).
2. Meanwhile mix together flour, salt and cheese. Work in 2 eggs and the
yeast mixture until the dough can be kneaded in bowl with floured hands,
about 6-8 minutes. When smooth and elastic, let dough rise in greased bowl,
covered for 1 hour.
3. Punch down dough and let rise again. Shape to fit into a greased loaf
pan. Beat together 1 egg and 2 tablespoons milk. Brush top of loaf mixture
with mixture and let rise until doubled.
4. Bake in preheated 375 degree oven about 45 minutes or until nicely
browned. Remove from pan and cool before slicing.
