Mc Caffrey House -Simple Egg Casserole
12 large eggs
2 cups cottage cheese
1/2 cup (1 stick) butter, melted
5 cups shredded Monterey jack cheese
Tomato slices for garnish, as desired
Preheat the oven to 350 F. Butter a 13-by-9-inch baking dish.Crack open the
eggs and add to the container of a blender. Process for about 30 to 60
seconds, or until fluffy.
Pour into a large bowl and add the remaining ingredients, including
additions for any of the variations desired. Pour into the prepared baking
dish and bake for 50 to 60 minutes, or until set in the center.
Variations:
Add any of the following combinations:
l 2 large fresh tomatoes, chopped; 1 bunch of green onions, chopped.l 1
pound fresh mushrooms, sliced; 1/2 large red bell pepper, chopped.
l 2 cups chopped fresh spinach; 2 fresh tomatoes, chopped; 1 bunch of green
onions, chopped.
l 1 small can of black olives, drained and chopped; 1/2 pound cooked ground
beef; 1 bunch of green onions, chopped.
Garnish each serving with a half slice of tomato.
Makes 8 servings.
