Recipe: Weight Watchers Classic Caesar Salad

~~~Classic Caesar Salad~~~
DRESSING
Combine in a blender and puree:
1/4 cup fresh lemon juice
2 TB water
2 TB grated Parmesan cheese
2 medium garlic cloves
1 TB extra virgin olive oil
1 TB red wine vinegar
2 anchovies canned in oil, drained, optional*
1 tsp. Dijon mustard
1/2 tsp. Worcestershire sauce
1/4 tsp. ground black pepper
SALAD
4 cups romaine lettuce, chopped, rinsed well and patted dry**
Place lettuce leaves in a large bowl and toss with dressing until well
coated. Yields about 2 cups per serving.
Serves | 2
POINTS per serving | 3
If you don't like the taste of anchovies, just delete it from the
recipe.
*Use only the light green and yellow leaves. Discard outside leaves
or use them to line the salad bowls.
