Recipe: Annie's Spaghetti Squash Casserole

1 spaghetti squash
1 cup sliced mushrooms
1 onion -- diced
garlic -- to taste
cumin -- to taste
1 16 oz. can tomato sauce
2 pounds extra lean ground beef
fat-free cheddar cheese -- shredded
1. Cut spaghetti squash in half and put into a bowl covered with wrap and
cook in microwave for 20 minutes until tender to touch. Let cook and scoop
out seeds. Take a fork and pull out the strands of squash. (they just fall
out in strands like spaghetti.)
2. Saute all other ingredients. Combine with squash and top with cheese.
3 Bake at 250 for 15 minutes.
