Recipe: Apple Pie

6 c. sliced, peeled baking apples (about 5-6 medium)
2 TBSP water
1 TBSP lemon juice
1 c. brown sugar
3 TBSP flour
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ginger
Pastry for double crust pie
In saucepan, combine apples, water, and lemon juice. Cook over medium
low heat just until apples are tender. Remove from heat and cool. Do
not drain. In large bowl, combine brown sugar, flour, cinnamon,
nutmeg, and ginger. Add apples and toss to coat. Place bottom crust
in pie pan, add apple mixture. Cover with top crust. Seal and flute
edges. Cut slits in top crust. Bake at 450 for 10 minutes, then
reduce heat to 350 and bake for 35-40 minutes longer, or until
golden brown.
You can substitute white sugar for the brown if you like.
