Recipe: Appetizer Quiches With Cream Cheese Pastry Dough

1/2 cup bacon or bacon bits
1/2 cup Swiss cheese -- grated
1 tablespoon dried parsley
2 eggs -- well beaten
1/2 cup half-and-half cream
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1 tablespoon Parmesan cheese -- grated
paprika
1/2 recipe cream cheese pastry dough -- recipe in cookbook
Shape dough into two dozen balls and press into tiny muffin pans. Layer bacon, cheese and parsley into unbaked dough. Beat eggs with cream, salt, dry mustard and Worcestershire sauce. Pour over bacon, cheese and parsley. Sprinkle with Parmesan cheese and paprika. Bake at 350 F for 30 minutes or until brown on top. They may be frozen and then warmed in a 200 F oven.

Cream Cheese Pastry Dough
1 cup butter
8 ounces cream cheese
1/2 teaspoon salt
2 cups flour
1 egg yolk
2 teaspoons half-and-half cream
Beat butter, cream cheese and salt until smooth and blended. Work in flour to form a smooth dough. Flatten dough to form a rectangle and wrap in foil. Chill overnight or several days. Divide dough and roll on floured pastry cloth with floured rolling pin or between two sheets of waxed paper. Shape as directed chill before baking. Brush all tops with egg yolk beaten with cream. Bake in 350 F oven unless otherwise specified. Filled turnovers and rolls freeze well. Preheat oven before removing appetizers from the freezer; bake without defrosting and add 5-10 mins to the baking time. Watch carefully. The color should be a rich, golden brown.
