Recipe: Apricot Chicken

500 g chicken thigh fillets -- chopped skin removed
125 g mushrooms sliced
1 onion thinly sliced
1 packet chicken noodle soup -- (45 g )
420 g canned apricots in their own juice
125 g green beans or snow peas trimmed
Preheat the oven to 180C. Place the chicken, mushrooms, onion, soup mix and apricots in a large casserole dish, cover and bake for about 45 minutes, or until the chicken is tender. Stir in the beans or snow peas. Bake for a further 5 minutes and then serve with crusty bread and a salad.
