Recipe: Apricot Glazed Ham

6 kg ham on the bone
1 jar apricot conserve -- (250 g )
1/4 cup brandy
2 tablespoons balsamic vinegar
Remove the ham rind by running your thumb around the edge of the ham, under the rind and pull, beginning from the widest edge. Use a small sharp knife to cut through the rind around the shank, and then in a decorative pattern cut around the rind. Remove a layer of fat from the entire surface of the ham or make some light slashes randomly over the fat. Place the ham in a deep baking dish. Dollop the combined apricot conserve, brandy and balsamic vinegar over the ham. Bake for 45 minutes. Carve ham into thin slices. Serve with glace fruits tossed in a little seeded mustard and white wine over a low heat.
