Recipe: Cheese Pastry Loaf

LOAF
2 cup soft breadcrumbs
750 g minced pork and veal
1 large onion chopped
2 cloves garlic -- crushed
1/4 cup chopped stuffed olives
2 tablespoon finely chopped parsley
1 egg
1 teaspoon mixed herbs
CHEESE PASTRY
1 3/4 cup self raising flour
1 cup grated matured cheese
1 teaspoon celery seed
1 tablespoon salad oil
1/2 cup milk
Loaf: Combine all ingredients, mix thoroughly. Season to taste with salt and pepper. Press into loaf pan and bake as directed. Remove loaf from pan and drain for 10 minutes. Increase oven temperature to hot. Meanwhile make pastry.
Pastry: Mix first 3 ingredients together. Combine milk and salad oil, add to dry ingredients and mix to a stiff dough. Knead lightly. Roll out to a rectangle, place loaf in centre and completely cover with pastry, sealing edges well. Cut a hole in the pastry on top of the loaf to allow steam to escape. Decorate with pastry trimmings if desired. Place on oven tray and bake until golden brown. Serve with a green salad and crusty bread.
