Recipe: K'tieu Gantang - Rice Ribbon Noodles With Pork Egg & Broccoli

1 teaspoon cornflour
1 tablespoon water
750 g fresh rice ribbon noodles
1/4 cup vegetable oil
2 cloves garlic finely chopped
200 g pork fillet very thinly sliced
200 g broccoli cut into very small florets
2 eggs
SUACE
3/4 cup chicken stock or water
1 tablespoon fish sauce
1 tablespoon light soy sauce
1 teaspoon sugar
1/4 teaspoon freshly ground black pepper
SUBSTITUTES
Replace fresh rice ribbon noodles with
400g dried rice stick noodles
OR 400g rice vermicelli noodles or 400g -- soaked in hot
egg noodles
Water to soften then drained.

Omit the eggs to reduce the cholesterol in this dish.

Combine the cornflour, and water in a small bowl and set aside. Prepare the sauce by mixing the sauce ingredients in a medium bowl, stirring until the sugar dissolves. Set aside. Bring a large saucepan of water to the boil. Add the noodles and blanch for 15 seconds. Drain thoroughly and set aside. Heat a wok or large frying pan for 30 seconds, then add the oil. When hot, add the garlic and stir fry for 5 seconds. Add the pork stir fry for 1 minute then add the broccoli and stir fry until almost cooked about 2 minutes. Add the eggs, stir to break up, then immediately add the sauce. Simmer for 1 minute, add the cornflour mixture, and stir until sauce thickens and clears 30 seconds. Add the noodles; stir well to mix and heat through about 30 seconds.

There is no need to beat the eggs before adding.
