Recipe: Cabbage And Potato Casserole

2 pounds cabbage
2 pounds potatoes
8 slices bacon, diced
7 tablespoons margarine
2 1/4 cups milk
1/4 cup flour
Salt, pepper and nutmeg
Wash cabbage and cut into quarters. Remove core and thinly slice each
quarter. Cook in salt water for 10 minutes and drain. Wash potatoes, peel
and cut into slices; cook in salt water for 10 to 15 minutes and then drain.
Fry diced bacon until crisp and discard the fat. In a saucepan, melt 5
tablespoons margarine; stir in flour and milk. Cook, stirring constantly,
until thickened. Season with salt, pepper and nutmeg.
Grease a 2 1/2-quart casserole and place in it half of the cabbage, half the
potatoes and half the bacon. Pour half of the sauce over it. Repeat this
process with the rest. Dot with 2 tablespoons margarine and bake in a
preheated oven at 400 degrees for 20 minutes. Serves 4.
