Recipe: African Barbecued Chicken

African Barbecued Chicken
1 broiler-fryer chicken, cut in serving parts
6 oz. can tomato paste
1/2 cup water
1/2 cup vinegar
1 small onion, minced
2 Tbs. Worcestershire sauce
3 Tbs. peanut butter
1 tsp. dry mustard
1 tsp. salt
dash cayenne
2 hard-boiled eggs -- sliced
Mix tomato paste, water, vinegar and minced onion. Stir in the
Worcestershire, peanut butter, mustard, salt, and cayenne. Roll
chicken parts in sauce, then place in 2 quart casserole dish. Pour
remaining sauce over chicken, cover and marinate in refrigerator at
least 8 hrs or overnight. Bake at 325 for 1-1/2 hrs. Prior to
serving, arrange egg slices over chicken.
