Recipe: Almond Orange Cake Gluten Free

Makes 1 cake = approx 10 pieces
4 large eggs
2/3 cup sugar
2 oranges
(you use the grated zest from 1 orange
and then in all 2/3 cup of the juice from both)
approx 3/4 cup scalded almonds
Decoration:
1 3/4 oz good-quality dark chocolate
Grease and flour a baking dish with a diameter of good 10". Heat the oven to 435F. Grind the almonds in the food processor but not for too long, they can very well be a little "chewy" still.
Grate the outermost zest off one of the well-scrubbed oranges. Squeeze out the juice from both oranges. Separate the eggs. Beat the whites until stiff and foamy, then beat yolks with sugar and grated orange zest. Mix in the almonds in the egg yolk mixture and then gently fold in the whites.
Pour the batter in the baking dish and bake in the lower part of the oven for 15 minutes. Lower the heat to 350F, then bake for another 15 minutes. The cake will have sunk. Let cool slightly before gently unmolding on a serving platter.
If the juice seems too sour, add some sugar to it. Prick the surface of the cake with a fork and drip the juice over it. Coarsely grate the chocolate and sprinkle it over the cake.
