Recipe: Almond Soup

6-8 Servings
6 tablespoons Oil ,divided
1/3 cup unblanched whole almonds, ground
4 slices bread, toasted, crusts removed, cut into 2x1/2-inch strips
1/2 cup sliced almonds
3 cans (10-1/2 ounces each) beef consomme
3 cups water
1/4 teaspoon almond extract
Grated Parmesan cheese
Combine 3 tablespoons Oil and ground almonds in small bowl. Set
aside. Heat remaining 3 tablespoons Oil in medium skillet. Add toast
strips
and sliced almonds. Cook over moderate heat, stirring frequently, until
almonds are lightly browned. Set aside.
Combine beef consomme and water in 2-quart saucepan. Heat to boiling. Stir
in ground almond mixture and almond extract. Ladle into bowls. Top with
toast
mixture. Sprinkle with grated Parmesan cheese, if desired.
