Recipe: Angel Hair Pasta With Shrimp And Feta

1/2 cup plus 2 tablespoons olive oil, divided
1/2 cup chopped shallot
Pinch sea salt
Pinch crushed red pepper
1 cup chopped tomato
2 tablespoons fresh dill, chopped (or 2 teaspoons dried)
Zest from 1 lemon
1/2 cup dry white wine
1 pound raw medium shrimp, peeled and deveined
2/3 cup crumbled feta cheese
3/4 pound dry angel hair pasta

Bring a large pot of salted water to a rolling boil. Add pasta and cook
until al dente. Drain and reserve.

Heat 1/2 cup olive oil in a large skillet over medium heat. Add shallot and
salt and red pepper. Sauté until shallot softens, about 3 minutes. Add
tomato, dill, zest and wine. Simmer 2 minutes. Remove contents of skillet
and reserve.

Place remaining 2 tablespoons oil in skillet and sauté shrimp, turning once,
until pink on both sides, about 2 minutes. Add reserved tomato mixture to
skillet along with feta and reserved pasta and stir well. Heat until pasta
is warmed through and serve.
Serves 4 to 6.

fat, 6 grams saturated fat, 122 milligrams cholesterol, 341 milligrams
sodium, 49 grams carbohydrates, 5 grams fiber.
