Applesauce Meat Balls
Sauce:
1 c. tomato juice
1/2 c. catsup
1/2 c. water
1 green pepper, chopped
1 onion, chopped
1 carrot, sliced
1 stalk of celery, chopped
Combine ingredients. Bring to boil; simmer
while mixing remaining ingredients.
2 lbs. ground beef
1 c. unsweetened applesauce
1 c. dry bread crumbs
2 eggs
2 t. salt
1/8 t. pepper
1/2 sm. onion, grated
Combine ingredients; shape in balls. Roll
in flour; brown in fat. Place in baking dish;
cover with sauce. Bake 1 hour and 30 min.
at 325°. Makes 8 servings.
