Recipe: Applewood Smoked Bacon, Spinach, And Mushrooms

APPLEWOOD SMOKED BACON, SPINACH, AND MUSHROOMS
3 thick slices apple smoked bacon, cut in one inch pieces
3 cups sliced mushrooms, a mixture of button, Portobello, shiitake, and
morels
One half cup half and half
One fourth cup dry white wine
1 tablespoon fresh lemon juice
6 cups fresh baby spinach leaves, packed
In a large saucepan or wok, over medium heat, fry bacon until crisp. Add
mushroom slices and continue to cook and stir just until browned (about 3
minutes).
Add half and half and wine; turn heat to medium high. Add lemon juice, then
spinach. Cook and stir constantly until spinach has wilted - sauce should
lightly coat bacon, mushrooms, and spinach.
Serve immediately.
Serves 3
The smoked flavor of the bacon is very important to the finished flavor of
the dish. If you can't find applewood smoked bacon, opt for hickory smoked,
or perhaps maple flavored.
