Recipe: Autumn Cottage Pudding

Autumn Cottage Pudding
2/3 cup brown sugar
1/2 cup flour
2 teaspoons baking powder
1 egg, beaten
1 teaspoon vanilla
3 cups chopped apples (about 3 medium)
1/2 cup flaked coconut
2 tablespoons butter, melted
1/2 cup chopped nuts
Stir together brown sugar, flour and baking powder. Combine egg, butter and
vanilla; mix well. Add to dry ingredients and beat until well blended. Fold
in apples, nuts and coconut. Turn into greased 8-inch square pan. Bake at
400 degrees for 30 to 35 minutes. Serve warm or cold.
