Recipe: Baazhannaia Ikra Iii

1 med. eggplant
1 onion, peeled and finely chopped
2 tbsp. olive oil
1 8-oz. can tomato sauce
3 tbsp. ketchup
Juice of 1/2 lemon
1 tbsp. sugar
Salt and pepper to taste

Prick eggplant; cover loosely with foil and bake in 350-degree oven for
35-40 min. Cool. Remove skin and chop pulp coarsely. Cook onion and garlic
in olive oil until soft and transparent.Add all other ingredients and
simmer, covered, for 20 min.,
stirring occasionally. Taste for seasoning, and add lemon juice, salt and
pepper as needed.Chill and serve with black bread. Serves 4-6.
