Recipe: Bacon Topped Cheese Ball

8 oz. cream cheese, softened
1/2 cup sour cream
2 cups (8 oz) shredded Swiss cheese
2 cups (8 oz) shredded sharp Cheddar cheese
3 Tbs. grated onion
3 Tbs. sweet pickle relish
1 Tbs. prepared horseradish
1/4 tsp. salt
1/4 tsp. lemon-pepper seasoning
1/8 tsp. garlic powder
6 slices bacon, cooked and finely crumbled
1/4 cup minced fresh parsley
1/4 cup finely chopped almonds, toasted
Fresh parsley sprigs, optional
Sliced almonds, optional

Combine cream cheese and sour cream in a large mixing bowl; beat at
medium speed of an electric mixer until smooth. Add shredded
cheeses, onion, pickle relish, horseradish, and seasonings; beat at
low speed of electric mixer until well blended. Cover and chill
thoroughly. Combine bacon, minced parsley, and chopped almonds; stir
well. Shape chilled cheese mixture into a ball; roll in bacon
mixture, pressing bacon mixture into cheese ball with hands. Wrap
cheese ball tightly in wax paper, and chill until ready to serve. If
desired, garnish cheese ball with parsley and sliced almonds. Serve
with assorted crackers.
