Recipe: Baked Breakfast Burritos

Sauce:
2 (11oz.) pkgs. frozen creamed chipped beef, defrosted and divided
1/3 c. sour cream
1/3 c. milk

Burritos
6 eggs, lightly beaten
1/3 and 1/2 c. cheddar cheese, shredded
3 T. green onion, chopped, divided
1 T. water
1/4 tsp.salt
1/4 tsp. hot pepper sauce
black pepper to taste
1 T. butter or margarine
1/4 c. ripe tomato, chopped
6 tortillas ( 7 inch)

Sauce: Combine 1 1/2 packages creamed chipped beef, sour cream and milk in
medium bowl. Spread 1/3 cup sauce in greased 9 x 13 baking dish.

Burritos: Combine eggs, 1/3 cup cheddar cheese, 1 tablespoon green onion,
water, salt, hot pepper sauce and black pepper in medium bowl. Melt butter
in medium skillet. Add egg mixture; cook stirring often until eggs are set.
Fold in remaining half package of creamed chipped beef. Divide egg mixture
evenly onto 6 tortillas. Fold and place seam side down on top of sauce in
baking dish. Top with remaining sauce, 1/2 cup cheese, 2 tablespoons green
onion and tomato. Bake at 375* for 15-20 minutes or until heated through and
cheese is melted.
