Recipe: Baked Cornish Hens

Baked Cornish Hens

2 Cornish hens, halved
3 tablespoons butter
salt and pepper to taste
1 teaspoon dry mustard
1 teaspoon paprika
lemon juice
2 teaspoons thyme
1 clove garlic, minced
2 chicken bouillon cubes
1 1/2 cups water
1/2 cup white wine
1/2 pound fresh mushrooms, sliced
Preheat the oven to 325 degrees F. Melt the butter in a glass casserole dish.
Place the hens in the melted butter and sprinkle the hens with salt and
pepper to your liking.
Sprinkle each hen half with about 1/4 teaspoon dry mustard, 1/4 teaspoon
paprika, lemon juice to taste and 1/2 teaspoon thyme. Sprinkle the minced
clove of garlic over the hens.

In a small bowl, mix together the bouillon cubes and 1 1/2 cups cold water.
Pour over the hens. Cover the hens with foil and roast at 325 degrees F. F
for 2 1/2 hours. Halfway through the cooking time, add 1/2 cup white wine,
pouring all over the hens.

Remove the foil during the last 5 to 10 minutes of cooking and sprinkle
fresh, sliced mushrooms over the hens.
