Recipe: Baked Macaroni And Cheese

2 cups elbow macaroni (8 oz.)
2 Tbs. butter
2 Tbs. flour
2 cups whole or skim milk
1/2 medium onion, minced
1 bay leaf
1/4 tsp. sweet paprika
2-1/4 cups grated sharp Cheddar or Colby cheese
Salt and pepper to taste

1/2 cup fresh bread crumbs
Heat oven to 350. Grease a deep, 1-1/2 quart baking dish. Bring 6
cups of water and 1-1/2 teaspoons salt to a rolling boil in a medium
saucepan. Add macaroni, and cook just until tender. Drain and remove
to a large bowl. In a large saucepan over medium heat, melt butter.
Whisk in flour and cook, whisking for 3 minutes. Gradually whisk in
milk, then stir in onion, bay leaf and paprika. Simmer gently,
stirring often, for 15 minutes. Remove from heat and stir in two-
thirds of the cheese. Season with salt and pepper. Stir in the
macaroni. Pour half of the mixture into the baking dish, and sprinkle
with half of the remaining cheese. Top with the remaining macaroni
and cheese. Melt 1 tablespoon butter in a small skillet, add bread
crumbs and toss to coat. Sprinkle over the top of the macaroni. Bake
until the bread crumbs are lightly browned, about 30 minutes. Let
stand for 5 minutes before serving.
