Recipe: Barbecue Party Wings

Barbecue Party Wings
3 lbs. chicken drummies or whole wings
Salt and pepper, to taste
1 pkg. dry Italian dressing seasoning mix
1 cup barbecue sauce
Salt and pepper chicken wing pieces liberally. Soak in Italian
dressing mix you have prepared according to directions. Heat oven to
375 degree. Lay chicken wing pieces in a single layer on rack in
shallow baking pan. Bake 40 minutes, turning once. Brush barbecue
sauce on one side of drummies and bake 8 to 10 minutes, turn over and
brush with barbecue sauce. Bake another 10 minutes. If chicken fat
is not crispie, put under broiler and watch real close until it is to
your liking.
Footnote: You may lay these chicken pieces on a buttered cookie
sheet, but they cook much better and more evenly on a rack. If you
can, purchase a pan about the size of a lasagna pan that comes with a
rack in in. I gave 20.00 dollars for mine at a discount store
several years ago. I like to fix my chicken for fried chicken, brown
the meat well on both sides and transfer to the rack. I put it in a
350 degree oven and I only have to turn once and you don't have it
sticking and pulling your crust off when you try to turn it.
