Recipe: Basic Biscotti Dough

1/2 cup margarine
1 cup white sugar
2 eggs
1 egg yolk
2 1/2 teaspoons baking powder
3 cups flour
Choose the combination of fruit, nuts, and flavoring of your choice
below:
1 Tablespoon orange zest, almond flavoring, or vanilla extract 3/4 cup
to 1 cup dried cranberries, or diced apricots, or candied fruit 1/2 cup
chopped pecans, slivered almonds, walnuts, or pistachio nuts
Using a whisk, mix together the following and set aside: 1 egg white, 1
teaspoon water and 1 tablespoon white sugar. In a large bowl mix
together the margarine, sugar, eggs and egg yolk with a mixer. Add the
baking powder and half of the flour. Add the fruit and nuts and mix in
by hand. Add remaining flour.
Divide the dough into two parts. Using flour on your hands, shape each
part into two logs and place on one cookie sheet covered with parchment
paper. Pat down into flat topped logs to about 1-1/2-inches high and
squared off in appearance.
Brush the top and sides with the egg white mixture. Sprinkle the top of
each log with raw sugar. Bake in oven for about 20 minutes on 375
degrees. Take out when they are not doughy in the center and cool for 10
minutes on a cooling rack. Reduce the oven heat to 325 degrees. Slice
into 1-1/2- to 2-inch slices. Place on the sheets and return to the oven
for about 10-15 minutes. Turn each piece over and return again to the oven
for the last 10-15 minutes. They should be a golden brown color when
removed. Cool on a rack until cold. Store in an airtight container.
