Recipe: Basic Italian Panini Rolls

4 cups unbleached white flour (King Arthur is best)
1 1/2 cups warm water
2 1/2 teaspoons yeast
1/2 teaspoon sugar or honey
1 1/2 teaspoons salt
2 tablespoons extra virgin olive oil

Mix yeast in 1/2 cup of the warm water; whisk in honey until very well
blended. Let stand 5 minutes. Put all flour and salt into bowl of food
processor fitted with steel blade (or Kitchenaid fitted with dough hook,
though I prefer the food processor method). With motor running, add yeast
mixture. Allow to incorporate for a minute, then slowly add the rest of
water and the oil. Allow machine to knead dough until it is a smooth ball
that wraps cleanly around the inside of the bowl (a couple of minutes in the
food processor). Turn into a lightly olive-oiled bowl and cover with plastic
wrap. Let rise once. Turn onto lightly floured countertop. Gently pull off
2- to 3-inch lumps and shape quickly into desired shape (I do rounds or
twists). Put on lightly floured cookie sheets and cover again with plastic
wrap. Let rise 15 to 20 minutes in warm place. Bake at 425 degrees for 20 to
25 minutes or until golden to medium brown (depends on how crusty you like
them). Makes 12 to 15 rolls. These freeze very well in Ziploc bags if you
don't eat them all on the first day.
