Recipe: Beef Brisket Barbecue (baked)

Beef Brisket Barbecue (Baked)
1 (4-5 lb.) well trimmed fresh beef brisket (NOT corned beef)
1 tsp. salt
1/2 cup ketchup
1/4 cup white vinegar
1 tbsp. Worcestershire sauce
1 1/2 tsp. liquid smoke
1/4 tsp. pepper
1 medium onion finely chopped
1 bay leaf Heat oven to 325ºF. Rub surface of beef with salt. Place in
ungreased rectangular pan, 13x9x2-in. Mix remaining ingredients; pour
over beef. Cover and bake about 3 hours or utnil beef is tender. Cut
thin diagonal slices across grain at an angle from 2 or 3 faces of beef.
Remove bay leaf and spoon any remaining pan juices over sliced beef if
desired. Makes about 12 servings. 1 servings gives: 245 calories and
calories from fat 100; fat 11 g and the saturated fat is 4 g; cholesterol 85
mg; sodium 390 mg; carbohydrate 4 g; fiber 0 g; protein 33 g.
