Beet And Tuna Salad
Serves: 8
1 1/2 lb beets fresh, cooked and cubed
1/2 c lettuce (8 leaves)
1 7-oz can tuna Albacore, chilled and well-drained
3/4 c celery chopped
3/4 c mayonnaise real
1 tsp lemon juice fresh
1/4 tsp dill weed dried
1 garlic small, minced
1/3 c green onions minced
1/2 tsp salt
Freshly ground pepper to taste
2 eggs hard-cooked and chopped
1. Chill beets. Arrange lettuce leaves on 8 salad plates. Place beets, tuna, and celery in bowl; toss.
2. Blend mayonnaise, lemon juice, dill weed, garlic, onions, salt, and pepper until smooth. Blend dressing with beet mixture. Portion salad onto lettuce leaves. Top each serving with chopped egg.
