Recipe: Carciofi Alla Romana Artichokes Roman Style

Carciofi Alla Romana (Artichokes Roman Style)
Ingredients:
12 medium-sized artichokes
2 cloves garlic
Salt
Fresh Black pepper
4 tbs. olive oil
Parsley
1 lemon,squeezed
Directions:
Remove the stalks,tips,and tough outer leaves of the artichokes. Keep
the artichokes in cold water and lemon juice until ready for cooking
(this will prevent them from turning black).
Place artichokes in a pan. They should fit tightly so that they don't
turn on their side during cooking.
Add all the other ingredients and just enough water to cover.
Bring to a boil.
Cover the pot and let simmer at a reduced flame for a few minutes.
Uncover the pot and cook for another 15-20 minutes.
Place in serving dish.
Serve hot or cold.
6 Servings
Note:I like these with Mayo into which I have shaken a bit of garlic
juice and a few shakes of lemon juice
