Carrot Soufflé
Ingredients
1 lb. carrots 1/2 cup margarine 3/4 cup sugar 3 tbs. flour 1 tsp. baking powder 3 eggs 1 tsp. vanilla extract 1/2 tsp. salt Cooking spray

Preparation
Preheat oven to 350°. Wash & scrape carrots & cook until soft. Drain and mash. Add margarine, vanilla, & eggs & mix well. Sift together flour, baking powder, salt, & sugar. Add to carrot mixture & blend until smooth. Spray a baking dish with cooking spray. Pour carrot mixture into disk & bake for 45 minutes.
