Recipe: Cheese, Jicama, And Green Chile Nachos

Makes 36 nachos
36 Toasted Corn Tortilla Chips
1 pound Monterey Jack cheese, cut into 36 2-inch squares
1 medium jicama (about 1 pound), cut into thin 2-inch squares
4 large fresh green chiles, poblanos or Anaheims, roasted and peeled then
cut into 2-inch squares
1 cup lightly packed coarsely chopped fresh cilantro
Prepare the tortilla chips, if using homemade.
Place them in a napkin-lined basket. On a large
serving platter, arrange the cheese, jicama, chiles, and cilantro. Serve the
basket of chips with the platter of ingredients next to it.
