Recipe: Chicken Oriental With Asparagus

Chicken Oriental with Asparagus
4 tablespoons salad oil
l med. onion, sliced
l/4 tsp. pepper
2 tablespoons sugar
l lb. boneless chicken
l green pepper thinly sliced
l/2 lb. asparagus
2 tablespoons soy sauce (I usually use the lower sodium soy sauce)
Heat oil in a wok or electric skillet. Cut chicken into one inch
chunks and stir fry until cooked through. Remove from wok and set
aside. Cut asparagus into two inch strips. Add the onion, green
pepper, pepper and sugar; cook, stirring until vegetables are crishp
tender. Add the asparagus then the chicken. Sprinkle with soy
sauce.. Cover and cook until mixture begins to steam. Reduce heat
and simmer for approximately l2 minutes. Stir over rice. I usually
serve with egg rolls.
