Recipe: Chorizo And Refried Bean Nachos

36 Toasted Corn Tortilla Chips
2 tablespoons vegetable oil, or more if needed
1/2 pound fresh bulk chorizo, or packaged,with casings removed
1/2 medium onion, finely chopped
2 cups canned refried beans, heated
1 cup guacamole, purchased or homemade
Red salsa, purchased or homemade
Prepare the tortilla chips, if using homemade. Then, in a medium nonstick
skillet, cook the
chorizo over medium heat until brown, 4 to 5
minutes. Add the onion and cook until the onion softens, about 3 minutes. To
assemble, layer the
chips equally with beans, chorizo, and guacamole. Put a dollop of salsa on
top. Serve warm.
