Recipe: Citrus Jalapeno Chicken

Citrus Jalapeno Chicken
Makes 4 servings

4 (about 1 lb. total) boneless, skinless chicken breast halves
1/4 cup orange Marmalade
1 tablespoon Dijon mustard

1 tablespoon olive oil

1 tablespoon Diced Jalapeños

2 teaspoons lime juice

1/2 teaspoon grated lime peel

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/8 teaspoon ground cumin

1 tablespoon finely chopped cilantro (optional)
PREHEAT oven to 400º F. Line baking sheet with heavy-duty foil; place
chicken on prepared baking sheet.

COMBINE marmalade, mustard, olive oil, jalapeños, lime juice, lime peel,
salt, pepper and cumin in small bowl. Brush chicken generously with half of
marmalade mixture.

BAKE for 15 minutes. Remove from oven; brush chicken generously with
remaining marmalade mixture. Bake for an additional 15 to 20 minutes or
until chicken is no longer pink in center. Sprinkle with cilantro.
