Confetti Ice Cream Pastry
One recipe of favorite double crust pie pastry
1 cup red candied cherries
1 cup green candied cherries
1 cup chopped dates
1 cup chopped pecans
1 can coconut
1 gallon vanilla ice cream softened
Roll pastry to fit a large baking pan. Bake on 350 F until browned.
Cool completely .Fold the fruits and nuts into the softened ice
cream. Spread over the cooled pastry evenly. Freeze and cut into
pieces to serve. Makes 24 servings. Good for parties or buffets.
