Recipe: Cottage Cheese Appetizer

1 lb. (2 cups) cottage cheese
1/2 lb. sweet butter, softened
3 cloves garlic, peeled and coarsely chopped
1/4 cup parsley, minced
1/2 tsp. freshly ground pepper
Salt
Combine all ingredients except salt and puree in food processor or bit by
bit in blender. Add salt to taste. Chill in refrigerator for at least 2
hours before serving. Excellent with thin rye crackers.
Serves 8-10.
