Recipe: Diabetic Shredded Cabbage

Diabetic-Shredded Cabbage
1 pound white cabbage
1/4 cup water
1/2 teaspoon salt
1 tablespoon margarine
Whisper of pepper
Trim and wash cabbage. Shred coarsely or cut into slices about 1/8 inch
wide. Place water and salt in a saucepan and bring to a boil. Add cabbage.
Mix lightly and cover tightly. Simmer over low heat for 12 minutes, stirring
once during the cooking period. Drain well. Add margarine and pepper to
cabbage. Toss lightly and serve hot, using 1/2 cup cabbage per serving.
