Recipe: Eggplant And Onions On The Grill

EGGPLANT AND ONIONS ON THE GRILL
1 c. Olive oil
1/2 tsp. Salt
1/4 tsp. Pepper
1 t. Chopped fresh rosemary
2 tsp. Minced garlic
1 medium eggplant, sliced 1/2 inch thick
1 large red onion, cut into 10 wedges
1 large white onion, cut into 10 wedges
In a small bowl, stir together oil, salt, pepper, rosemary and garlic.
Place eggplant and onions on 24 x 12" piece of heavy-duty aluminum foil.
Spoon oil mixture over vegetables. Bring edges of aluminum foil up to
center. Tightly seal top and sides. Place packet on grill, cover; grill
until vegetables are crispy tender, about 15 minutes.
