Recipe: Fish Sticks Fish Tacos

1) Cook the fish sticks according to the baking directions.
2) Prepare any of the following filling ingredients desired, and place in
small serving bowls:
a) shredded lettuce OR shredded cabbage (finely sliced cole slaw mix will
work)
b) lime or lemon wedges (lime is awesome here)
c) thinly sliced tomatoes
d) thinly sliced cucumbers
e) thinly sliced red onions or green onions
f) shredded cheese (I leave this off myself)
g) tartar sauce (or mix 1/4 cup mayo with some pickle juice and some finely
chopped dill pickle and finely diced onion)
h) hot sauce or salsa
3) Wrap some corn tortillas in a damp towel and microwave on high for 1
minute.
4) Place all the ingredients on table for self service. Assemble as follows:
a) Start with 2 softened corn tortillas
b) Lay 2 - 3 fish sticks in the middle
c) Layer on any of the veggies/sauces/cheese you like
d) fold the tortillas around the fillings, taco style, and squeeze some
lime/lemon over all.
