Recipe: Gelatin Slaw

Gelatin Slaw
8 cups shredded cabbage
2 medium carrots, shredded
1 green pepper, sliced
1/2 cup chopped onion
Diced celery
1 1/4 cups cold water, divided
1 envelope unflavored gelatin
2/3 cup sugar
2/3 cup vinegar
2/3 cup oil
1 1/2 tsp salt
1/4 tsp pepper
2 tsp celery seed
Mix cabbage with
remaining vegetables. Add 1 cup cold water. Refrigerate for 4-5 hours.
Soften gelatin in remaining cold water. Mix sugar with vinegar, salt,
pepper and celery seed. Bring to a boil. Add gelatin; mix. Chill until
thickened. Beat well; add oil, beating well. Drain vegetables well on
paper towel. Pour gelatin mixture over vegetables; mix lightly until
vegetables are well coated. Chill until firm.
