Recipe: Guacamole

GUACAMOLE
1 avocado
2 tablespoons diced tomatoes
2 tablespoons chopped onion
1 tablespoon chopped cilantro
1/2 tablespoon chopped fresh serrano chili
1/4 teaspoon salt, to taste
little bit of lime juice, to taste
1. Cut the avocado in half. Remove the seed; scoop out the pulp into a small
bowl. Use a fork to mash the avocado.
2. Add the tomatoes, onion, cilantro, serrano chili, salt and lime juice to
the avocado and stir. Cover the bowl and refrigerate before serving.
Makes 2 servings
Notes: The real trick to great guacamole is to use good avocados and fresh
ingredients. Make sure your avocados are ripe and of the Haas variety. Serve
this dip with corn chips or with warm, soft, corn tortillas to make tacos.
Do not use serrano chili if you do not like hot food.
