Hot and Sour Cabbage Soup
2 tablespoons olive oil
1 large onion, sliced
4 garlic cloves minced
1 teaspoon crushed red pepper flakes
1/4 cup balsamic or red wine vinegar
2 tablespoons brown sugar
-- or--
1 to 1 1/2 packets sugar substitute (Splenda works well) 6 cups finely
sliced cabbage (the bagged, pre sliced cabbage for cole slaw is easy)
1 cup chopped, drained, canned tomatoes
6 cups chicken stock
salt and pepper to taste
In a large heavy pot heat olive oil and saute onions until translucent.
Add the garlic
and crushed red pepper flakes and cook, stirring for 1 minute. Stir in
the vinegar
and sugar and bring to a simmer. Add the cabbage and stir to combine.
Add the tomatoes and chicken stock and bring to simmer. Season with salt
and pepper. Simmer uncovered for 30-40 minutes until the cabbage is very
tender. Taste the soup and if needed, adjust with more vinegar, sugar,
salt or pepper to get it to your
personal "just right."
