Recipe: Hummus

2-8 oz. cans chick peas (garbanzo beans)
1/3 cup tahini (sesame seed paste)
1/2 cup freshly squeezed lemon juice
1/4 cup low fat yogurt mixed with 1/4 cup water
1/4 cup minced fresh parsley
2 Tbsps. tamari sauce
2 scallions, minced (include green tops)
2 to 4 minced garlic cloves
1 Tbsp. olive oil
1/2 tsp. ground cumin
1/2 tsp. honey
Drain chick peas well. Use a food processor or blender to puree until
smooth. Add remaining ingredients and blend well. May be prepared two days
in advance. Refrigerate until ready to serve. Serve as a spread or dip with
whole wheat pita bread and vegetables.
