Recipe: Hummus

1/4 teaspoon salt
1 clove of garlic
2 tablespoons tahini paste
2 tablespoons of olive oil
1 15-ounce can of garbanzo beans, drained, reserve 3 tablespoons juice
2 or 3 tablespoons fresh lemon juice
1/4 teaspoon parsley
1/4 teaspoon cumin

In a food processor, with the chopping blade, mix the salt, garlic, tahini
and olive oil until smooth. Add the beans alternately with the lemon juice
and bean juice until mixed smooth but thick. Add cumin and parsley; add more
salt if necessary. Serve in a shallow bowl, smooth the top and garnish with
drizzled olive oil and a carrot slice. Can be served with pita bread or as
part of a vegetable platter. Makes almost 2 cups.
