Recipe: Easy Chicken Tomato Skillet

Pam No Stick Cooking Spray
1 to 1 pounds boneless, skinless chicken breasts, cut into 1/2-inch
chunks
1 can (28 oz.) Diced Tomatoes with Basil, Garlic and Oregano
1/2 cup water
1/2 teaspoon salt
1 1/2 cups uncooked long-grain rice
2 medium zucchini, quartered lengthwise and thinly sliced
2 teaspoons dried basil
1/2 cup Parmesan cheese
Salt and ground black pepper, to taste
Steps to prepare:
SPRAY a 12-inch nonstick skillet or Dutch oven with cooking spray.
Cook chicken over medium-high heat 3 to 5 minutes or until lightly
browned.
ADD tomatoes, water, salt and rice; mix well. Bring to a boil. Reduce
heat, cover tightly, and simmer 10 minutes.
STIR in zucchini and basil. Cover; cook 15 minutes or until rice is
tender. Remove from heat.
BLEND in cheese. Season with salt and pepper, to taste.
Prep time: 10 minutes
Cooking time: 30 minutes
