Recipe: Ham & Sausage Jambalaya

2 tablespoons Vegetable Oil
1 1/2 cups uncooked long-grain rice
1 clove garlic, crushed, or 1/4 teaspoon garlic powder
6 ounces ham, diced
1/2 pound smoked sausage, cut into 1/2-inch pieces
1 can (14.5 oz.) Diced Tomatoes with Green Pepper, Celery and
Onions
1 can (14.5 oz.) Chicken Broth
1/4 teaspoon each: ground red pepper, salt and ground black pepper
1/4 cup each: chopped green onion and chopped fresh parsley
Hot pepper sauce, to taste
Steps to prepare:
HEAT oil in a 3-quart saucepan over medium-high heat; add rice and
garlic. Cook for 3 to 5 minutes or until rice is lightly browned.
ADD ham, sausage, tomatoes, broth and seasonings. Bring to a boil;
cover. Reduce heat; simmer 20 to 25 minutes or until rice is tender.
STIR in green onions and parsley. Season with hot pepper sauce, to
taste.
