IBIZAN CHEESE TART

Pastry
2 tablespoons butter
1/4 cup sugar
1 egg
1/2 teaspoon anisette liqueur or anise extract
1 teaspoon brandy
1 cup unbleached all-purpose flour
pinch of salt
1/4 teaspoon anise seed
1/4 teaspoon baking powder
Cheese Filling
8 ounces queso fresco -- or
ricotta cheese -- at room temperature
2 ounces cream cheese -- at room temperature
2 ounces mild fresh goat cheese
fresh mint to taste -- chopped
3 eggs
1 1/3 cups sugar -- plus
more for sprinkling
To make the pastry: In a large bowl, cream the butter with the sugar then
beat in the egg. Stir in the anisette liqueur or anise extract and brandy.
Using a wooden spoon, quickly blend in the flour, salt, aniseed, and baking
powder. (Do not overmix or the pastry will be tough.) Form the dough into a
ball, wrap in plastic wrap, and refrigerate for 3-4 hours.
On a lightly floured surface, roll the chilled dough out into a circle about
1/8" thick and 1 1/2" larger than a 9" tart shell or quiche ring. Carefully
lay the dough over the pan and trim off any excess dough.
Preheat the oven to 350F. To make the filling: In a large bowl, beat
together the queso fresco or ficotta cheese, cream cheese, goat cheese, and
mint until soft and fluffy. In a medium bowl, beat together the eggs and 1
1/3 cups sugar and fold into the cheese and mint mixture, mixing until
thoroughly blended. Pour the batter into the prepared crust.
Bake in the preheated oven for about 45 minutes, or until the tart has
puffed and trembles just slightly when jiggled. A toothpick inserted in the
center will come out almost clean, with just a trace of batter on it. Remove
from oven, let cool to room temperature, then chill for several hours.
Remove from the pan and arrange on a platter. Sprinkle the top lightly with
sugar.
Makes one 9" tart.

A cheesecake with an unusual mint and anise flavor. It can be made the day
before a party and kept in the refrigerator.
