Recipe: Irish Potatoes

6 to 8 servings
1/4 cup (1/2 stick) butter
1 small head cabbage, shredded (about 8 cups)
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cups warm mashed potatoes (see Note)
Melt the butter in a large skillet over medium heat. Add the shredded
cabbage, water, salt, and pepper; cover and cook for 15 minutes, stirring
occasionally. Uncover and cook for 5 more minutes, or until the cabbage is
wilted, stirring frequently. Add the potatoes and mix just until combined;
serve.
Note: Season your potatoes with extra salt and pepper if desired, and don't
worry about using instant mashed potatoes.
