Recipe: Low Carb-omelet Pinwheels With Mushroom Sherry

Cooking spray
6 eggs, separated
1/2 teaspoon salt
2 tablespoons cornstarch
1 teaspoon dried thyme
1/4 cup shredded Parmesan
Spinach Filling:
1/2 cup chopped onion
1 tablespoon cooking oil
1 cup chopped cooked chicken
1 (10-ounce) package chopped spinach, thawed and well-drained
4 hard-cooked eggs, chopped
Salt and pepper, to taste
Mushroom Sherry Sauce:
1 (8-0unce) can sliced mushrooms
6 tablespoons butter, divided
3 tablespoons flour
1/2 teaspoon ground nutmeg
2 cups skim milk, warmed
12 cup shredded Gruyere cheese
1/4 cup sherry
Preheat the oven to 350*F. Evenly coat an 11- by 17-inch jellyroll pan with cook- ing spray. Line the pan with parchment O!"waxed paper and spray again. In a medium bowl, beat egg whites until stiff, but do not let dry peaks form. In another medium bowl, beat egg yolks with salt
until thick and lemon-colored. Pour yolks over whites. Sprinkle with cornstarch and thyme. Fold mixture lightly with rubber scraper until blended. Spread evenly in a prepared pan. Sprinkle evenly with the cheese. Bake until set and lightly browned, about 12 to 15 minutes. Invert omelet onto clean towel and spread filling evenly over it. Re-roll omelet to encom- pass filling and form a pinwheel. Place seam-side down on an ovenproof platter.
Cover and keep Warm.
To make the Spinach Filling: In a 10-inch skillet
over medium heat, saute onion in oil until tender. Stir in chicken and spinach and heat thoroughly. Stir in eggs and salt and pepper to taste. Keep
Warm.
To make the Mushroom Sherry Sauce: In a 10-inch skillet over medium heat, saute mushrooms in 2 tablespoons butter until tender. Remove from pan and drain. Melt the remaining 4 tablespoons butter in the same skillet. Whisk in
flour and nutmeg. Gradually whisk in the milk. Continue to whisk over medium heat until thickened. Remove from heat. Stir in mushrooms, cheese and sherry; stir to melt cheese. Serve with pinwheel.
