Recipe: Lowfat Bean Burritos

Lowfat Bean Burritos
Makes:
6 servings
Ingredients:
a.. 2 cups cooked pinto beans
b.. 2 teaspoons chili powder
c.. 1/4 teaspoon ground cumin
d.. 1/2 onion, chopped
e.. 1 tomato, chopped
f.. 6 non/lowfat flour tortillas
g.. 1/2 cup non/lowfat sour cream
h.. 3/4 cup non/lowfat grated cheese
i.. 3/4 cup shredded lettuce
Directions:
a.. Place the beans in a bowl, and mash with a fork until chunky, Stir in the chili powder and cumin, and set aside.
b.. Coat a large skillet with nonstick cooking spray (nonfat), and add the onion and tomato. Place the pan over medium heat for about 5 minutes, stirring occasionally.
c.. Add the beans to the skillet and stir until the bean and vegetable mixture has the consistency of refried beans. Remove the skillet from the heat and set aside.
d.. Heat the tortillas in microwave or on skillet to warm.
e.. Spoon the warm bean mixture along the left side of the tortilla. Top the bean mixture with sour cream, cheese, and lettuce. Fold the tortilla and serve.
